The What

2 cans- Black beans, drained
1 can- Dark red kidney beans
2 cups- Carrots, thinly sliced
1 cup- Sweet onion, diced
1 cup- Celery, diced
1 large- Sweet potato, cut into bite size pieces
3 tablespoons- Chili powder
1 teaspoon- Cumin
1/2 teaspoon- Black pepper
1 teaspoon- Sea salt
30 ounces- Tomatoes, diced
4 ounces- Green chilies, diced
6 ounces- Tomato paste
2 1/2 cups- Vegetable broth, optional water
1 cup- Corn kernels
1/2 cup- Fresh cilantro for garnish

The How

Put all ingredients into slow cooker. Mix well and cover. Cook it on low heat for at least 6 hours and maximum of 8 hours. You can top with shredded cheese, sour cream or chopped avocado if desired.
