4 medium- Zucchini
1 lb boneless/skinless (chopped)- Chicken breasts
2 tablespoon- Olive oil
Sea salt
Pepper
1/2 cup- Pesto
2 cups, halved- Cherry tomatoes
1/3 cup (plus more for topping)- Parmesan cheese
for garnish- Fresh basil
for garnish- Crushed red pepper

The How

<li><p class="font_8">Heat 1 tablespoon of olive oil in a large frying pan over medium heat. Then, sauté the chicken chunks for 6 minutes, after sprinkling them with pepper and salt. Once cooked, set aside.</p></li>
<li><p class="font_8">Add the rest of the oil, zucchini noodles, tomatoes, and pesto in the same frying pan. Cook for about 1 minute while stirring, until the zucchini noodles are softened. Combine the chicken and parmesan with the noodles, and stir for 30 seconds.</p></li>
<li><p class="font_8">Divide the dish into 4 and sprinkle parmesan, crushed red pepper, and fresh basil on top.</p></li>
