The What

2 cups- Romaine lettuce, chopped
2 large- Tomatoes, slightly chopped
1 medium- Cucumber, slightly chopped
1 medium- Yellow bell pepper, slightly chopped
1/4 cup- Parsley, slightly chopped
2 cups- Fresh mint, slightly chopped
2 tablespoon- Lemon juice
2 teaspoon- Lemon zest
6 ounces- Salmon filets
1/2 teaspoon- Kosher salt
1/4 teaspoon- Ground black pepper

The How

To oven on to broil. Mix romaine, tomato, cucumber, bell pepper, parsley, mint, lemon juice, and lemon zest. Set aside. Position the salmon filets on a baking sheet, add salt and pepper. Cook in the oven for at least 10 mins. Occasionally, check the salmon and turn sides until it has brown color. Add lemon zest on the salmon. Serve hot with desired sauce.
