The What

1lb- Tiny new potatoes
3 tbsp (each)- Chopped parsley, mint and chives
6 tbsp- Olive oil
2 tbsp- Lemon juice
1 lb (chopped into chunks)- Skinless chicken breasts
1 Red onion (chopped)
1 Red seeded pepper (chopped)
1 Lemon (chopped into wedges)
For the relish:
8 Ripe tomatoes
2 Green chilies- seeded and chopped
Small (chopped)- garlic cloves
4 tbsp- Olive oil
2 tbsp- White wine vinegar

The How

<li><p class="font_8">Soak eight (8) skewers (either the wooden or bamboo) in cold water for 30 mins.</p></li>
<li><p class="font_8">Add salt to the water and cook the potatoes for at least 10 mins to make it soft.</p></li>
<li><p class="font_8">Thoroughly mix in a large bowl; the herbs, oil, lemon juice, salt and pepper before adding potatoes and chicken.</p></li>
<li><p class="font_8">Chop the onion into wedges (6) and separate each layer from one another.</p></li>
<li><p class="font_8">Mix the onion and pepper together.</p></li>
<li><p class="font_8">To prepare the relish, finely chop the tomato after removing the seeds. Mix it with chillies, garlic, oil, vinegar, salt and pepper. Put into a small dish.</p></li>
<li><p class="font_8">Thinning spread the chicken, potatoes, peppers and onion over the 8 skewers, and a lemon wedge should be added to all.</p></li>
<li><p class="font_8">A moderate heat should be used to barbecue it for about 5 mins on both sides and allow the chicken to be well cooked before serving with a tomato relish.</p></li>
