The What

6 slices- Whole wheat bread, crusts removed
3 slices- Deli turkey
1/2 cup- Reduced fat cheddar cheese, grated (optional)
6 large- Eggs
2 tablespoons- Olive oil
1/4 teaspoon- Sea salt
1/4 teaspoon- Black pepper

The How

Preheat oven to 375°. Lightly grease 6 muffin cups and put in a muffin tray. Squeeze the slices of bread into the cups, and brush them with olive oil. Add the cheddar cheese on the bottom. Then add a turkey slice. Crack an egg into the middle of each cup. Season with pepper and salt. Bake for 20 minutes or until the whites are set.
