Blackberry Vanilla French Toast

This recipe converts the classic “French Toast” breakfast into a healthy and balanced meal.

The What

4 large- Eggs, beaten
1/2 teaspoon- Vanilla extract
Pinch- Salt
4 slices- Whole wheat bread
1 cup- Blackberries
20- Pecan halves, chopped
2 teaspoons- Maple syrup

The How

Whisk the beaten eggs, salt, and vanilla in a large bowl. Then soak the slices of bread in the egg mixture.
Coat a nonstick frying pan with cooking spray and cook the soaked bread slices over medium heat for 3 minutes, until the underside is browned. Flip and cook for another 3 minutes.
When done top off and serve with maple syrup, pecans, and blackberries.
